Apple and Broccoli Slaw with Pistachios and Tahini Dressing

One of my favorite go-to dishes. And did you know raw broccoli is one of the healthiest things you can eat? Healthy and delicious, can’t beat that.

Ingredients

1 large broccoli head

1 green apple, I used Granny Smith

1/3 cucumber

1/3 cup shelled pistachios+extra for serving

2 tablespoons tahini

3 tablespoons mayonaise

Juice from 1/2 lemon

Water

Salt and pepper

Instructions

  1. Cut the broccoli, apple and cucumber into small pieces and place in a bowl with pistachios.
  2. In a bowl whisk together tahini, mayo, lemon and a little water to make a creamy dressing. Add the water a little at a time until you have the right creamy consistency. Season with salt and pepper.
  3. Mix in the dressing and serve with some extra pistachios on top. You can make the dressing up to a week in advance.
