Heirloom & Peach Pistachio Salad

Ingredients
1 ripe peach
1 ripe heirloom tomato
2 slices crispy prosciutto
4 large basil leaves, chiffonade
2 tablespoons extra virgin olive oil
2 tablespoons aged balsamic vinegar
2 tablespoons roasted shelled pistachios
1 tablespoon pistachio oil
1 burrata cheese ball
1 ounce pistachio honey
1 basil leaf for garnish
2 slices of grilled artisan bread
Salt/pepper to taste
Instructions
Heirloom Peach Pistachio Salad
Slice both the peach and tomato into eighths. Hand-tear the grilled bread into bite size pieces. Place peaches, tomatoes and bread in a mixing bowl. Season well with salt and pepper. Drizzle olive oil and balsamic vinegar on the salad. Add basil, roasted pistachios and pistachio oil. Toss the salad.
ASSEMBLY
Add chopped pistachios and balsamic vinegar on top of the burrata. Drizzle with pistachio honey. Arrange salad on plate. Top with seasoned burrata. Garnish with basil on top.
