Valley Gold Pistachio Salad

Ingredients

1 head organic red leaf lettuce

1 head frisee lettuce

1 cup Bing cherries, pitted and split

½ cup shelled pistachios, salted

2 tablespoons feta cheese

2 tablespoons chives, sliced

1 teaspoon tarragon, sliced

 

Pistachio Vinaigrette

½ cup pistachio butter

½ cup pistachio oil

¾ cup banyuls vinegar

¾ cup grapeseed oil

½ cup honey 

Salt & pepper to taste

Instructions

Vinaigrette

In a blender, place pistachio butter, honey, and banyuls vinegar. Slowly drizzle in pistachio oil and grapeseed oil until emulsified. Season well with salt and pepper.

 

ASSEMBLY

Slice red leaf lettuce and frisee, wash well, spin or towel dry. Combine lettuces, Bing cherries, pistachios, and feta cheese to mixing bowl. Season with salt and pepper. Garnish with chives and drizzle with pistachio vinaigrette and serve immediately.
