Pistachio + Apricot Curried Brussels Sprouts

Tell me that you hate Brussels sprouts and this is the salad I’ll make to change your mind.

Ingredients
1 cup roasted & salted pistachios, shelled
1 pound Brussels sprouts
3/4 cup mayo
2 tablespoons curry powder
1 tablespoon mango chutney
Juice of two lemons
1/3 cup dried apricots, sliced
Fresh mint leaves
Salt & pepper
Instructions
- Shave Brussels sprouts on a mandolin
- In a small bowl, mix mayo, lemon juice and curry powder
- Toss Brussels sprouts, apples, pistachios and apricots in dressing
- Garnish with mint
